Nouilles Sautées aux Légumes (Sautéed Noodles with Vegetables)

This week we made sautéed noodles with vegetables.

This recipe called for tofu, which I have never cooked before. It turned out alright, but not quite as good as the Thai restaurant from which we usually get take-out! Chickie was even able to try cutting the tofu and also the baby corn. She was wary of the sharper knife, but was careful and did a great job!


The recipe called for lo mein noodles, but my husband likes vermicelli noodles so we tried those.

It was pretty good, but I think we overcooked the vermicelli noodles. I don't think they were in the water for any more than a minute, but they still seemed overdone. There were no cooking instructions on the package, so I will need to look up how to best cook them if we decide to try them again! The only thing I would change is cutting back on the oil in the sauce, putting a little more soy sauce in and possibly adding some fresh ginger. Chickie liked the vermicelli noodles, and at first was going to try some with the sauce as well as some tofu, but changed her mind when she learned there was nuts in the recipe.
We also had a mini victory in our picky eater saga this week. I have taken to making sweet potato fries, and at dinner this week, Chickie seemed curious about them. So I suggested she could try a bite and just spit it out if she didn't like the taste. She tried one bite and seemed to like it so took another bite and then said it was more so-so. But she willingly put something orange in her mouth, so I'll take what I can I get! We'll definitely keep making sweet potato fries and maybe if she tries them enough, they'll grow on her!
For dessert this week we tried out a new brownie pan my in-laws got us for Christmas. The kind of pan that pre-cut the brownies while they cook. It worked quite well and the brownies were super yummy! I use the Good House Keeping classic brownie recipe (from a cookbook I have), which uses melted chocolate instead of cocoa, so they are very rich. Just my kind of dessert!
